WW 5 Can Soup
Ingredients:
1 (14 1/2 ounce) can diced tomatoes
1 (15 1/4 ounce) can corn
1 (15 ounce) can minestrone soup (ready to serve)
1 (15 ounce) can mixed vegetables
1 (15 ounce) can black beans, rinsed
Directions:
Mix all ingredients in a pot and warm.

WW Friendly Chili
Ingredients:
1 teaspoon olive oil (I think this can probably be skipped and lower the points of this dish)
3/4 lb lean ground beef
1 onion, chopped
3 garlic cloves, minced
1 bell pepper, chopped (I used a red bell pepper because that is what I had on hand, the original recipe specifies a yellow )
1 tablespoon chili powder (you may need more chili powder for chili with more heat, see note in description)
1 teaspoon ground cumin
1 (28 ounce) can tomatoes, diced
1 (15 ounce) red kidney beans, rinsed and drained (or use the corn as I did, see note in description)
1 (15 ounce) can black beans, rinsed and drained (see note in description)
3/4 teaspoon salt
3/4 cup nonfat sour cream
2 scallions, sliced (optional)
Directions:
In a large pot or dutch oven heat oil over medium high heat.
Add beef and cook until browned (3-5 minutes).
Add onion, garlic, bell pepper, chili powder and cumin; cook until vegetables are soft (3-5 minutes).
Stir in tomatoes and beans (see my changes in the description), and salt. Bring to a boil. Reduce heat and simmer until chili is thickened (15-20 minutes).
Serve topped with sour cream and scallions, if desired.

Weight Watchers Cabbage Soup
3 cups nonfat beef broth (beef is the best) or 3 cups nonfat vegetable broth (beef is the best) or 3 cups nonfat chicken broth (beef is the best)
2 garlic cloves, minced
1 tablespoon tomato paste
2 cups chopped cabbage
1/2 yellow onion
1/2 cup chopped carrot
1/2 cup green beans
1/2 cup chopped zucchini
1/2 teaspoon basil
1/2 teaspoon oregano
salt & pepper
Directions:
Spray pot with non stick cooking spray saute onions carrots and garlic for 5 minutes.
Add broth, Tomato paste, cabbage, green beans, basil, oregano and Salt & Pepper to taste.
Simmer for a about 5-10 minutes until all vegetables are tender then add the zuccini and simmer for another 5 or so minutes.
I have tried different variations. Leaving out green beans. Adding chopped green onions in addition to the yellow onion.
All very good. You can customise it a bit.

Mexican Casserole - 6.5 Weight Watcher Points

1 lb extra lean ground beef (drained or rinsed!)
1/2 cup onion (chopped)
1/4 cup canned jalapeno slices, chopped
2 cups fresh tomatoes, chopped or 1 (15 ounce) can diced canned tomatoes
1 (15 ounce) can kernel corn (drained)
1 (15 ounce) can black beans (rinsed and drained)
1 (1 1/4 ounce) package taco seasoning mix
8 corn tortillas
3/4 cup nonfat sour cream
1/3 cup reduced-fat Mexican cheese blend, shredded
1/3 bunch fresh cilantro, chopped, to taste (or less (or more)
Directions:
Brown ground beef and chopped onions in large skillet; brown 10 to 12 minutes or until thoroughly cooked, stirring constantly. Drain well and rinse with warm water to remove all fat; return beef/onions to skillet.
Add corn, black beans, tomatoes, chilies/jalapenos and taco seasoning mix; mix well. Reduce heat; simmer 5 minutes.
Meanwhile spray 12x8-inch (2-quart) baking dish with nonstick cooking spray. Cut each tortilla in half; place 8 halves in bottom of sprayed baking dish, overlapping slightly.
Spoon half of beef mixture evenly over tortillas. Spoon sour cream over beef mixture; spread evenly. Top with remaining 8 tortilla halves and remaining beef mixture. (Cover tightly with foil & Freeze for later OR cook as directed below…).
(Thaw overnight if frozen) Heat oven to 350ºF. Bake at 350ºF for 25 minutes. Remove from oven; sprinkle with cheese. Cover; let stand 5 minutes or until cheese is melted. Sprinkle with chopped cilantro and serve with fresh chopped lettuce, tomatoes, salsa, black olives, etc…
Makes 6 large Servings at 6.5 weight watcher pts/each.
